Dutch mini pancakes

Ingredients for 1 servings:

  • 3 eggs
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 50 g sugar
  • 250 g flour
  • 150 ml milk
  • 2 tsp, leveled baking powder
  • 2 tbsp oil
  • 2 tbsp powdered sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dutch poffertjes

Whisk together eggs, salt, vanilla sugar, and sugar until thick and creamy. Alternately stir in 200g of flour and milk in batches. Let stand for about 15 minutes. Mix 50g of flour and baking powder and stir into the batter. Heat oil in a nonstick pan. Drop 1 teaspoon of batter into the pan, leaving a little space between each one, and cook. Using the remaining batter, cook poffertjes in the same way. Remove from the pan and dust with powdered sugar. These pancakes taste best fresh from the pan!
