East Frisian lemon iced tea

Ingredients for 4 servings:

  • 1 lemon(s) (organic)
  • 4 tsp, heaped tea (East Frisian tea blend)
  • 6 pieces of rock sugar, large pieces (Kluntje)

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Squeeze the lemon (it’s important that it’s not sprayed!), filter out the pulp, and cut the rind into pieces. Pour the juice into a jug. Put the lemon peel and the Kluntje (or the equivalent amount of tea sugar or rock candy) into a measuring jug. Put 4 heaped teaspoons of East Frisian tea blend into a tea bag and place it in the measuring jug. Pour one liter of boiling water over the tea and let it steep for 4-5 minutes. Then remove the tea bag and lemon peel. If necessary, filter out the pulp from the tea again. Then pour the tea into the lemon juice. Let the tea cool and then refrigerate, or enjoy immediately with ice cubes after cooling.
