Ingredients for 1 servings:

  • 2 egg yolks
  • 1 cup sugar (100 g)
  • 2 tsp vanilla sugar
  • 1 cup milk
  • 2 ½ cups flour (250 g)
  • 2 tsp baking powder
  • 1 cup hazelnuts, ground (80 g)
  • 2 egg whites
  • 1 pinch of salt
  • 400 g of washed fruits of your choice (e.g. apricots, oranges…)
  • 1 tbsp powdered sugar for dusting
  • Fat for the mold
  • Flour for the mold

Working time approx. 25 minutes; Total time approx. 25 minutes

Grease and lightly flour a 22 cm springform pan, possibly lining the bottom with baking paper. Whisk the egg yolks, sugar, vanilla sugar, and milk until frothy. Add the flour, baking powder, and hazelnuts. Beat the egg whites with a pinch of salt until stiff peaks form and fold in. Pour the batter into the springform pan, arrange the prepared fruit on top, and gently press it into the batter. Bake the cake in a preheated oven at 180°C on the lowest rack for about 45 minutes. Once cooled, dust with powdered sugar.
