Ingredients for 4 servings:

  • 75 g butter or margarine
  • 100 g sugar
  • 1 packet of vanilla sugar
  • Salt
  • ½ lemon(s), grated peel
  • 2 eggs
  • 100 g flour
  • 25 g starch flour
  • 1 tsp, leveled baking powder
  • 125 g powdered sugar
  • 2 tbsp water
  • Sugar (granulated sugar), for sprinkling

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cream the fat until fluffy, then gradually add the sugar, salt, lemon zest, and eggs. Gradually stir in the flour mixed with the baking powder. Pour the batter into a greased lamb dish. Bake in the oven at 180°C for approximately 35-45 minutes. Let the lamb cool in the dish for approximately 5 minutes, then let it cool further on a wire rack. For the glaze, mix the sifted powdered sugar with a little hot water until smooth. Brush the mixture onto the cooled Easter lamb and sprinkle with sugar.
