Easy High Protein Waffles

Ingredients for 1 servings:

  • 2 eggs
  • 100 g Skyr
  • 20 g vanilla protein powder
  • 50 g wheat flour
  • 3 g baking powder
  • some milk 1.5%, or oat milk without added sugar
  • possibly Flavdrops vanilla

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Whisk together the eggs and skyr. Combine the protein powder, wheat flour, and baking powder in a separate bowl. Stir the dry mix into the egg and skyr mixture until a smooth batter forms. If the batter is too thick, add a little milk. For a more intense vanilla flavor, add a few drops of Flavdrops. Let the batter rest for about 10 minutes. Bake the batter in the waffle iron for about 2 minutes, until the waffles are golden brown. Serving suggestion: Serve the waffles with raspberry or blueberry puree. Blend some frozen or thawed fruit for this, or eat them simply on their own. Variations: The protein powder and Flavdrops can be adjusted for different flavors (e.g., chocolate, cookies & cream). Makes approximately 5 Belgian waffles. Per serving: 475 kcal (97 kcal per waffle), 46 g protein, 45 g carbohydrates, 13 g fat.
