Ingredients for 4 servings:

  • 500 g potatoes, cooked the day before
  • 60 g flour
  • 2 egg yolks
  • ½ tsp salt
  • 1 pinch of nutmeg
  • Flour, for breading
  • Breadcrumbs
  • Egg(s), lightly beaten, for breading
  • Oil for frying

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Mash the potatoes, add the flour, egg yolk, salt, and nutmeg, and mix. Form them into about 24 croquettes or balls. Coat them one after the other in flour, egg, and breadcrumbs, and deep-fry in oil.
