Mashed potatoes with parsnip chips

Ingredients for 4 servings:

  • 5 parsnips
  • 6 potatoes
  • 250 g whipped cream
  • some milk
  • vegetable broth
  • Salt
  • pepper
  • nutmeg
  • Oil for frying

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the mash, cook 3 peeled and diced parsnips in vegetable stock, drain, and mash. Cook the potatoes in salted water until tender and press them through a potato ricer (or mash thoroughly). Then mix the cream and parsnip mash into the potatoes (adding a little more milk if desired) and season with salt, pepper, and nutmeg. For the chips, thinly slice two unpeeled parsnips and fry them in oil in a pan until crispy. Either serve the mash garnished with the chips or layer the mash, chips, mash, and chips alternately to create a tower.
