Eggnog cherry muffins

Ingredients for 1 servings:

  • 2 eggs
  • 120 g sugar
  • 100 g butter, soft
  • 230 g flour
  • 100 ml egg liqueur
  • 70 ml milk
  • 1 packet of vanilla sugar
  • 2 tsp baking powder
  • 1 pinch of salt
  • 100 g sour cream
  • 1 jar morello cherries, drained
  • possibly powdered sugar for dusting
  • Paper cups

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with sour cream, makes 12 pieces

Beat the eggs with the vanilla sugar and sugar until frothy. Add the softened butter. Add all the remaining ingredients except the cherries and mix with a mixer for a few minutes until smooth. Fold in the drained cherries with a spoon. Pour the batter into the cups of a muffin tin lined with paper baking cups and bake at 200°C (top/bottom heat, fan oven: 180°C) for 20-25 minutes. Let cool and dust with powdered sugar before serving.
