Eggnog coconut bundt cake

Ingredients for 1 servings:

  • 200 ml oil
  • 5 eggs
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 200 g flour
  • 70 g desiccated coconut
  • ½ pack of baking powder
  • 250 ml egg liqueur
  • 30 g chocolate sprinkles
  • powdered sugar
  • eggnog
  • Desiccated coconut, for sprinkling

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Whisk the oil, eggs, and sugar until thick and foamy. Stir in the flour mixed with baking powder and coconut flakes, then stir in the eggnog and chocolate sprinkles. Pour the batter into a prepared Bundt pan and bake in a preheated oven at 160°C for about 45 minutes (test with a toothpick). Make a thin glaze from the powdered sugar and eggnog. Brush the cake with it and sprinkle with coconut flakes.
