Eggnog muffins

Ingredients for 12 servings:

  • 2 eggs
  • 125 g butter or margarine
  • 100 g sugar
  • 125 g flour (wheat or spelt flour)
  • ½ pack of baking powder
  • 125 ml eggnog
  • 2 tbsp chocolate shavings
  • powdered sugar
  • eggnog

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Line a muffin tin with paper baking cups. Beat eggs until frothy, then whisk with butter and sugar until smooth. Sift flour and baking powder and stir in. Fold in egg liqueur and chocolate shavings. Fill the cups 2/3 full. Bake at 180°C (preheated) for about 15-20 minutes. Whisk the powdered sugar and egg liqueur until smooth. Brush over cooled muffins.
