Eggnog muffins from the Actifry 2in1

Ingredients for 1 servings:

  • 100 g butter
  • 4 eggs
  • 1 packet of vanilla sugar
  • 2 tbsp sugar
  • 100 ml egg liqueur
  • 120 g flour
  • 1 packet of baking powder
  • Chocolate sprinkles or chocolate drops

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

First, separate the eggs. Beat the egg whites until stiff peaks form and chill. Cream the butter until fluffy. Add the egg yolks and sugar, mixed with the vanilla sugar. Mix the flour with the baking powder and stir in alternately with the eggnog. I used vanilla eggnog, but you can certainly use any flavor. Stir in the chocolate sprinkles or drops as well. Finally, fold in the beaten egg whites. Divide the batter between the muffin cups. For the Actifry, you definitely need silicone muffin cups, not paper ones. Fill the cups about 3/4 full and place them in the snack basket. I fit 6 in there. Tip: I put the remaining 7 on the griddle. I wanted to see if there was a difference. The batter rises unevenly in both cases; with the griddle, the risen dough touches the edges, so the snack basket is better. Set the timer for 10 minutes. That was plenty long enough for me. The muffins were baked through and tasted very good.
