Eggnog pancakes

Ingredients for 3 servings:

  • 200 g flour
  • 2 eggs, separated
  • 1 packet of vanilla sugar
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 30 g butter, melted
  • 150 ml milk
  • 120 ml eggnog

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

the best pancakes – fluffy and juicy

First, place the egg yolks and egg whites in separate bowls. Meanwhile, melt the butter in a saucepan. Add all ingredients except the tablespoon of sugar to the egg yolks and mix together. Beat the egg whites with the sugar until stiff peaks form and stir into the remaining batter. Pour 1 tablespoon of batter into a pan for each pancake and flip them once they’re lightly browned. This batter makes enough for about 10 pancakes. Serve with berries, vanilla ice cream, and whipped cream, for example.
