Ingredients for 2 servings:

  • 1 eggplant(s)
  • 2 garlic, Chinese
  • 1 bunch of parsley
  • 200 g sheep’s cheese
  • 2 tbsp olive oil
  • 1 tbsp olive oil (Robusto)
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

Preheat the oven to 200 degrees Celsius. Halve the eggplant lengthwise and then cut it crosswise, taking care not to damage the skin. Finely chop the garlic and parsley. Finely crumble the feta cheese. Sprinkle the cut-side down eggplant halves with the garlic and parsley, then the cheese, and finally the olive oil. Place the two halves, cut-side up, in a dish and bake in the oven for about 45 minutes. Season with salt and pepper and the Robusto olive oil before serving.
