- 1 slice(s) cooked ham, large slice
- 2 eggs
- salt and pepper
- some olive oil
- some butter

delicious variation of a classic
Slice the eggplant, season with salt and pepper. Heat the olive oil in a pan. Fry the eggplant slices until golden brown. Remove the slices from the pan, drain on kitchen paper, and place them side by side on a plate. Briefly fry the sliced ham in the pan over high heat for only about 30 seconds; the goal is a light brown. Place the ham on top of the eggplant slices. Fry two fried eggs in a little butter, season with salt and pepper, or to taste, and place them on top. Enjoy!
