Eggplant toast

Ingredients for 4 servings:

  • some olive oil
  • 1 eggplant(s)
  • 100 g cream cheese, natural
  • salt and pepper
  • 2 tsp ajvar
  • 1 dash of cream
  • 4 slice(s) toast bread, whole grain

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

First, cut the eggplant into small cubes (approx. 0.5 x 0.5 cm). Meanwhile, heat some olive oil in a pan. Add the eggplant cubes to the hot oil and fry briefly. Meanwhile, toast the slices of bread in the toaster. When the eggplant is slightly soft, season with salt and pepper and stir in the ajvar. Finally, add the cream cheese (or a little more if needed) and let it melt slightly. Then add a dash of cream and let it simmer slightly. Spread the eggplant mixture on the slices of bread and eat warm.
