Ingredients for 2 servings:

  • 4 m.-sized eggs
  • 1 small baguette(s)
  • 100 g Parmesan, freshly grated
  • olive oil
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

simply sophisticated

Add a generous amount of olive oil to a cold pan. Separate the eggs and pour the egg whites into the pan (leave the yolks in their shells for now). Carefully mix with the olive oil. Heat the pan slowly and let the egg whites set gently without stirring. Meanwhile, toast the baguette slices and drizzle lightly with olive oil. When the egg whites bubble (they start to dance), spread the Parmesan cheese over the egg whites and season with pepper. Three to four minutes later, carefully add the egg yolks to the pan. When the cheese is completely melted, it’s ready. Now arrange the baguette slices in the pan.
