Ingredients for 1 servings:
- 2 ½ kg elderberries, fresh
- 1 ½ kg sugar
- 1 liter of water
- ½ lemon(s)
Instructions

Collect fresh elderberries (in autumn, when they are ripe), as many as you need. The information above is a rough guide. It all depends on how much you think you will need for the cold season. Wash the berries and remove the stems with a fork. Then put them in a pot and pour water over them so that they are covered and no longer stick out. Bring the elderberries to a boil and simmer for about 10 minutes. Now pour the elderberries through a sieve lined with an old tea towel and squeeze firmly again. Add sugar and half a lemon to the juice and bring the whole thing to a boil again. You can also omit the sugar. Now pour the still-hot juice into hot-rinsed bottles and seal immediately. Once cooled, store in a dark, cool place (in the cellar)! Or: Put the washed elderberries in a juicer and boil the collected juice for 10 minutes, too, and then proceed as described above. The juice can then be warmed up again and given to the sick person if they have a cold. Or it can be used as a base for desserts, liqueurs, jellies, wine infusions, and so on, for further processing.
