Ingredients for 1 servings:

  • 500 g elderberries (the pomace after juicing)
  • 100 g sugar
  • 100 ml water
  • 35 ml vodka

Instructions

Utilization of leftovers after juice production – my “test staff” was enthusiastic

Fill a large screw-top jar with the elderberry pomace (the peel, seeds, and any remaining pulp that has been turned through the juicer after being juiced) until it is about 2/3 full. Bring the water to a boil, dissolve the sugar completely, and slowly pour the hot sugar water into the jar containing the pomace. Now fill with vodka. The pomace should be completely covered, but there should still be about 1 cm of free space at the top of the jar. Screw the lid back on and let it stand in a warm place for 6-8 weeks, shaking the jar vigorously every day at first. Then filter and bottle. Please note: All quantities are approximate! It will, of course, depend on the size of the jar(s) you are working with! And one more thing: Since the pomace has been boiling during the juice production process, there is no need to worry about the sambunigrin that is present in small amounts in the fruit and seeds.
