Elderberry pancakes

Ingredients for 2 servings:

  • 250 g flour
  • 400 ml milk
  • 100 ml elderberry syrup
  • 3 eggs
  • 1 pinch of salt
  • 2 tbsp oil
  • 100 g pineapple pieces
  • 100 g quark, 20% fat
  • 1 tbsp vanilla sugar

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Total time approx. 55 minutes

Combine flour, milk, juice, eggs, and a pinch of salt. Let the pancake batter rest for about 30 minutes. Then, fry the batter in a little oil to make pancakes. Chop the pineapple into smaller pieces, mix with the quark and vanilla sugar, and fill the pancakes with the batter and serve immediately.
