Ingredients for 1 servings:

  • 100 g elderflower umbels
  • 2 liters of water
  • 750 g sugar
  • 3 tsp citric acid, concentrated, from the pharmacy
  • 4 tbsp lemon juice, liquid lemon or fresh
  • 700 ml Doppelkorn, 38%

Instructions

Working time approx. 50 minutes; Rest period approx. 2 days; Total time approx. 2 days 50 minutes

Collect the elderflowers when the blossoms are fully open. Bring the water to a boil and pour over the elderflowers, add the citric acid and lemon juice, and let stand in a cool place for 2-3 days. After 2 days, heat the elderflower juice to approximately 50-60°C and dissolve the sugar in it. From here, there are several variations: – Bring to a boil and bottle the syrup – Bring to a boil, let cool, and add the schnapps – Add the schnapps immediately when the sugar is completely dissolved. Then bottle and enjoy chilled.
