  • 100 ml water, cold
  • 2 tsp mocha, Greek, powder-finely ground
  • 2 tsp sugar or maple syrup

Greek coffee traditionally in Mpriki

The mpriki is the special container used to prepare “Elliniko kafe” (the coffee), as it’s the right size (you can get one from a Greek restaurant). If necessary, you can also use the smallest pot you have at home. Pour the water and sugar into the mpriki and place it on the stove. It’s better to use a mini gas stove, as it’s the fastest and saves energy. You can buy one cheaply from a Greek restaurant, but if you don’t have one, you’ll have to be a little more patient. Set the stove to medium-high heat and dissolve the sugar in the water. Add the coffee and stir briefly; it shouldn’t dissolve completely; the heat will do the work. Be sure to stay with the coffee and make sure it doesn’t simmer. Very important! As soon as the first bubbles rise to the top, remove the “Elliniko” from the heat immediately. The “Elliniko” is traditionally served with a “Voutimataki” (something small for dipping)! It can also be prepared without sugar, simply on its own.
