Ingredients for 8 servings:
- 500 g quark (low-fat quark)
- 150 g sugar
- 1 bag(s) flavoring (Citroback or Orange peel)
- 3 bags of vanilla sugar
- 3 small eggs (or 2 large ones)
- 12 tbsp oil
- 9 tbsp milk
- 600 g flour
- 1 ½ bags of baking powder
- Margarine, liquid
- Sugar, fine

Place the quark in a cloth and squeeze out the liquid. Or, better yet, place the quark in a cloth, wrap it up, and let it drain in a sieve overnight. Change the cloth in the morning. Ideally, you’ll have around 300g of quark left over. Mix the quark with eggs, sugar, vanilla sugar, oil, milk, and lemon juice until you get a smooth cream. There should be no lumps of quark left. Mix the flour with the baking powder and stir it into the quark cream until you have a dough similar to yeast dough. Let it rest for about 30 minutes, then knead briefly by hand. Preheat oven to 200°C (180°C fan-assisted oven). Roll out the dough and cut out bunnies, etc. Brush with melted margarine to keep the bunnies soft during baking. Bake for about 10-15 minutes. Let it cool slightly, place it on a paper towel, and brush with melted margarine. Immediately roll in caster sugar. This recipe came about through my own experimentation with my children. It tastes just like most bakery products, but is much cheaper! Personally, I don’t use a food processor; I do all the steps by hand. The dough is lighter this way.
