Ingredients for 3 servings:
- 2 rolls of dough
- 400 g minced meat
- 1 onion(s)
- 1 garlic clove(s)
- 1 carrot(s)
- 1 pepper or paprika
- 1 egg yolk
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 42 minutes
For the filling, finely chop the onion, chili peppers, and carrots (e.g., using an onion chopper). Sauté the onion, mince the garlic, and add it to the onions along with the carrots, chili peppers, and minced meat. Fry until cooked through. Cut the puff pastry into 6 rectangles. Place a small amount of filling on half of each rectangle. Leave the edges free and brush with water. Fold over and press the edges shut with a fork. Brush the empanadas with egg yolk and bake in a preheated oven at approximately 220°C for 10-12 minutes.
