Ingredients for 1 servings:

  • 80 g flour
  • 1 egg(s)
  • 60 ml milk or coconut milk
  • 2 tbsp desiccated coconut
  • 1 tbsp butter or clarified butter
  • 2 tbsp, leveled sugar or brown sugar
  • 1 tbsp yogurt (possibly coconut yogurt or pineapple yogurt)
  • 1 tbsp raisins, if desired
  • 1 pinch of salt
  • possibly pineapple from the can
  • possibly powdered sugar for dusting

Instructions

Working time approx. 2 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 7 minutes

Beat the egg and sugar until frothy. Mix all ingredients except the butter. Heat the butter in a non-stick pan and add the batter. Let it brown lightly. Flip like a thick pancake, lightly browning the other side as well. Tear into pieces and continue frying until the desired brownness is achieved. Or prepare with just one pan and wash up (my single method): Put all ingredients except the butter in a non-stick pan and mix gently. Turn the stovetop to the highest heat. Stir repeatedly until the batter begins to firm up. Then add the butter and fry, stirring and tossing repeatedly until you have a Kaiserschmarrn. Serve as a main course for one person or as a dessert for two people. Top with canned pineapple pieces or simply dust with powdered sugar.
