Endive salad with apple pieces

Ingredients for 4 servings:

  • 300 g lettuce (endive)
  • 1 tbsp mustard, sweet
  • 1 tbsp cream cheese
  • 2 tbsp apple cider vinegar
  • ½ cup apple juice
  • 1 bunch of chives
  • 1 small red apple
  • 2 tbsp rapeseed oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the endive and cut into thin strips. Core the apple and cut it into small pieces without peeling it, leaving a few thin apple wedges for garnish. Toss the apple pieces and lettuce in a bowl or arrange on plates. Mix the apple cider vinegar with the mustard, apple juice, and cream cheese, then whip the dressing with the rapeseed oil. Season the dressing with salt and pepper and drizzle over the salad. Cut the chives into small rolls and scatter them on top. Serve garnished with the apple slices and a few chives.
