Ingredients for 4 servings:

  • 700 ml vegetable stock
  • 2 tbsp flour
  • 100 ml milk
  • 1 egg(s)
  • possibly cream or coffee cream
  • salt and pepper
  • nutmeg
  • some chives, finely chopped
  • some parsley, finely chopped
  • possibly grated cheese (Emmental or Gruyere)

Working time approx. 30 minutes; Total time approx. 30 minutes

Simple, low-fat and low-calorie soup for every day

Bring the broth to a boil. Combine the flour and milk and stir into the boiling broth. Season and simmer for 20 minutes. Now, thoroughly beat the egg in the soup bowl and, if desired, refine it with 2 tablespoons of cream. Remove the hot soup from the heat and pour it into the soup bowl, stirring constantly. Add the chives and parsley. Serve with freshly grated Emmental or Gruyère cheese, if desired.
