Ingredients for 4 servings:

  • 8 slices of toast
  • ½ cucumber(s)
  • Butter, salted or unsalted
  • Pepper, from the mill
  • Sea salt or coarse salt from the mill

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the cucumber and slice thinly with a slicer. Spread butter on the bread slices. Arrange the cucumber slices on top, season, and finish with a slice of bread. Remove the crusts from the bread slices. Cut the sandwiches diagonally. The cucumber sandwich is an integral part of English tea-time culture. Variations: Use mayonnaise instead of butter, then spread the mayonnaise on the bread slices just before serving. Instead of butter, use cream cheese with a little salt, pepper, and chives. The sandwiches are prepared as in the original recipe, but in addition to the pepper and salt, sprinkle with freshly squeezed lemon juice and sprinkle with cress.
