Ingredients for 4 servings:

  • 500 g sausage (homemade city sausage)
  • 2 large onions
  • 4 tbsp water
  • 4 tbsp oil
  • 3 tbsp vinegar
  • ½ tsp salt
  • 1 pinch(s) of pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 50 minutes; Total time approx. 1 hour 5 minutes

“City sausage with music”, a typical Nuremberg snack

Pour the vinegar, water, salt, and pepper into the bowl. Whisk until the salt is completely dissolved. Stir in the oil until a smooth marinade is formed. Peel the onion, slice it into fine rings, and add it to the marinade. Skin the sausage, cut it into thin slices, and add it. Mix everything thoroughly. Cover the bowl and let the salad marinate for half an hour. A traditional accompaniment is spicy farmhouse bread. A good Franconian beer is also traditional. Tip: Add finely chopped chives to the marinade.
