Ingredients for 1 servings:

  • 500 g jam, light (e.g. apricot jam)
  • 500 g powdered sugar, sifted
  • 200 g glucose
  • n. B. Food coloring of your choice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Jam with food coloring for garnishing petits fours

Mix the jam with the powdered sugar, then bring to a boil. Once the jam is smooth, remove from the heat and immediately stir in the glucose. Depending on how many colors you want, divide the jam into as many portions and pour them into aluminum containers. While the jam is still warm, color it with a few drops of the appropriate food coloring – you can use it immediately after coloring. Test: Depending on how dark or light you want the color to be, drop a little colored jam onto a small, light-colored plate. The jam becomes very thick after standing for a while; you can reuse it by heating it in a water bath until it is pipeable again (not too runny, but also not too thick, so that it runs a little when piped). Suitable for petit fours, cakes, cookies, etc. I always used this recipe for petit fours during my apprenticeship. Highly recommended.
