Eton Mess with banana

Ingredients for 2 servings:

  • 2 bananas
  • 1 cup of cream
  • 50 g meringue(s)
  • 10 g mint, fresh
  • chocolate sprinkles

Instructions

Place the cream in the refrigerator. Peel the bananas. Thinly slice 1 banana. Mash the other banana in a bowl using a fork. Place the meringue in a plastic bag and mash it with a heavy object, such as a pan. You can also crumble the meringue with your hands. Wash the mint, pick off the leaves, and finely chop 2/3. Pour the chilled cream into a clean bowl and beat with a whisk or hand mixer until stiff peaks form. Don’t overbeat, or it will turn to butter! Carefully fold the crumbled meringue, mashed banana, chocolate sprinkles, and chopped mint into the cream. Divide half of the cream mixture between two glasses/bowls, layer half of the banana slices on top, and spoon the remaining cream mixture over the top. Decorate with the remaining banana slices and mint leaves. 485 kcal per serving.
