Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 1 large egg(s)
  • 1 tbsp curd
  • some salt
  • 1 tbsp flour
  • n. B. Clarified butter

Potato pancakes from my grandma, a recipe about 100 years old

Peel the waxy potatoes and grate them finely. Squeeze the potato mixture with your hands and mix with the egg, quark, salt, and flour. If the grated potatoes turn a little brown, that’s okay; they’ll turn yellow again when fried. Heat clarified butter in a pan. Using a small ladle or tablespoon, add the potato mixture to the pan in portions. The circles should be about 6-8 cm in diameter. Turn the Baggers when they’re a nice light brown. Only turn them once, otherwise they’ll fall apart. Remove from the pan and place on a kitchen towel to absorb any excess fat. Baggers can be eaten with goulash, applesauce, or with cinnamon and sugar.
