Exotic fruit salad from the Ivory Coast

Ingredients for 4 servings:

  • ½ pineapple, fresh
  • 2 bananas
  • 2 oranges
  • 2 apples, sour, e.g. Boskop
  • 1 mango(s)
  • 2 kiwis
  • 1 carambola (star fruit)
  • 10 walnuts
  • 1 cup whipped cream
  • ½ lemon(s)
  • 2 tbsp sugar

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Côte d’Ivoire

Peel the pineapple, bananas, oranges, and apples, then slice and then cut into bite-sized pieces. Peel 3/4 of the underripe mango, remove the core, and chop the flesh. Slice 1 1/2 kiwis and then quarter them. Squeeze half a lemon. Place the fruit pieces in a very large bowl, drizzle with lemon juice, sprinkle with sugar, and mix gently. Let the salad cool. Before serving, slice the remaining mango, kiwi, and star fruit, chop the walnuts, and whip the cream until stiff peaks form. Divide the fruit salad among dessert bowls, top with the whipped cream, and garnish with the remaining fruit pieces. Scatter the walnut pieces on top.
