Stuffed zucchini with minced meat and feta

Ingredients for 2 servings:

  • 2 large zucchini
  • 1 m.-large pepper
  • 1 small onion(s)
  • 100 g tomatoes
  • 400 g minced beef
  • 100 g feta cheese
  • 50g Gouda
  • 1 ½ tbsp tomato paste
  • 400 ml tomatoes, pureed
  • Spice mix for minced meat
  • salt and pepper
  • some oil for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Wash the zucchini, cut it lengthwise, and hollow it out. Finely chop the zucchini flesh, peppers, tomatoes, and onions. Add a little oil to a hot pan and sauté the onions. Add the minced meat and fry. Add the peppers, zucchini flesh, and tomatoes to the minced meat and fry briefly. Season the minced meat with the spices and add the tomato paste and strained tomatoes. Cut the feta into small cubes and mix it into the minced meat. Stuff the zucchini with the minced meat mixture and sprinkle with a little Gouda cheese. Bake the stuffed zucchini in the oven at approximately 180 degrees Celsius for 25 minutes.
