Exotic Rice Pudding

Ingredients for 2 servings:

  • 600 ml milk, 1.5% fat
  • 100 ml cream
  • 150 g rice pudding
  • 1 pinch of salt
  • 1 mango(s), ripe
  • 2 dashes lemon juice
  • 4 tbsp sugar

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Peel the mango, remove the stone, and finely puree half. Mix the puree with lemon juice. Dice the remaining mango. Bring the milk and cream to a boil. Add the rice pudding and a pinch of salt. Cook over medium heat for about 25-30 minutes, stirring frequently to prevent it from burning. Add 4 tablespoons of sugar to the rice and stir in. Fold 1/3 of the puree and 1/3 of the mango cubes into the rice. Place dollops of the remaining puree on top and sprinkle with the remaining mango cubes.
