Ingredients for 4 servings:
- 6 egg whites
- 1 pinch of salt
- 3 banana(s), overripe, the skin should already be slightly black
- ½ liter coconut milk
- 250 g butter, semi-liquid
- 6 egg yolks
- 1 packet of vanilla sugar
- 200 g sugar
- 200 g desiccated coconut
- 500 g flour
- 1 packet of baking powder
Instructions
Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
Beat the egg whites with a pinch of salt until stiff peaks form. Blend the bananas and coconut milk in a blender. Beat the butter with the egg yolks, vanilla sugar, and sugar until fluffy. Then add the banana coconut milk and desiccated coconut and mix well. When the mixture is smooth, add the flour and baking powder and mix again. If the mixture is a bit too stiff, stir in a little more milk. Finally, fold in the beaten egg whites. Let the mixture rest for about 15 minutes, then make waffles. These waffles have a very aromatic flavor, which I recognize from Thailand.
