Extra cheesy pizza cake with caramelized sriracha onions

Ingredients for 5 servings:

  • 5 pizzas (four-cheese pizza), bought ready-made
  • 5 m.-large onion(s), red
  • 3 tbsp sriracha sauce
  • 400g mozzarella
  • 50 g butter

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Peel the onions and slice them into thin rings. Heat the butter in a pan and add the onions. Once the onions are translucent, add the sriracha sauce and sugar and caramelize the onions. Once they have reached the desired color, remove from the heat. Be careful! If the sugar caramelizes too much, it will become bitter. Preheat the oven to 180°C fan/convection oven. Bake the pizzas, but remove them from the oven after 75% of the baking time specified on the package. Distribute the caramelized onions evenly on four of the five pizzas. Stack the pizzas in a suitable baking pan, e.g., a 26cm or 28cm springform pan, so that the top pizza is the one without the extra onion topping. Spread the mozzarella generously over the pizza cake. Bake the pizza cake for another 10 minutes at 180°C fan/convection oven on the middle rack. Tip: Preparation depends on the size of the oven. All five pizzas should be baked for at least 75% of the specified time. Depending on the oven capacity, 2-3 pizzas can be prepared at the same time. Ideally, the individual pizzas should be pre-baked until they have risen but are not yet overly browned. However, at this stage, the pizza base is often still very soft. Therefore, caution should be exercised when stacking pizzas.
