Ingredients for 4 servings:

  • 1,200 g roast beef (false fillet)
  • Butter or olive oil
  • salt and pepper
  • Thyme

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 day 1 hour; Total time approx. 1 day 1 hour 10 minutes

Wash the meat, pat dry thoroughly, and trim if necessary. Rub it thinly with butter or olive oil and season with a little pepper, a pinch of salt, and thyme. Place it in a bag and vacuum seal. Cook in a water bath at 56 degrees Celsius for 25 hours. Remove from the bag and sear briefly on all sides.
