Fan-fried chicken with basil pesto and tomatoes

Ingredients for 2 servings:

  • 2 chicken breasts
  • 2 tbsp basil pesto
  • 1 m.-sized tomato(s)
  • 2 packs of mozzarella
  • 1 tbsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

First, wash the chicken breasts and then pat them dry. Next, wash the tomatoes and pat the mozzarella dry. Score the chicken breasts fan-shaped. Halve the tomatoes and mozzarella and cut into thin slices. Brush a baking dish with olive oil. Place the chicken breasts in the dish, spread with the pesto, and fill each with mozzarella and tomatoes. Bake everything in the oven at 180 degrees Celsius (350 degrees Fahrenheit) for 40 minutes. If you’re not on a low-carb diet, rice goes very well with it.
