Ingredients for 1 servings:

  • 4 cups flour
  • 2 cups sugar
  • 4 eggs
  • 1 cup(s) oil, not quite full
  • 1 cup(s) lemonade (Fanta) or seltzer
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 1 jar cherry(s), drain well

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk the eggs and sugar; add the flour, Fanta (or seltzer, which makes the cake “airier”), vanilla sugar, and oil. Finally, stir in the baking powder. The batter should be nice and creamy. Now pour the batter onto a greased or parchment-lined baking sheet and spread it evenly. And finally, the most fun part comes: “throwing” the drained cherries (e.g., morello cherries) onto the cake batter, one at a time, as you please! Now the whole thing goes into the oven at 180°C for 25-30 minutes. After about 25 minutes, you should check the cake’s doneness with a knife! And a tip for anyone with an oven that only has top heat: use 160°C, and if the cake has already hardened a bit on top, place a piece of baking paper on top, so it stays nice and soft!
