Ingredients for 24 servings:

  • 5 eggs
  • 300 g sugar
  • 6 packs of vanilla sugar
  • 350 g flour
  • 1 packet of baking powder
  • 125 ml oil
  • 175 ml orange soda
  • Fat, for the tray
  • 3 can/n peach(s) (850 ml each)
  • 600 g whipped cream
  • 3 packs of cream stiffener
  • 500 g sour cream, alternatively crème fraiche
  • some sugar
  • some cinnamon

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Whisk the eggs, sugar, and 1 sachet of vanilla sugar until frothy. Mix the flour and baking powder and stir in. Add the oil and lemonade and stir in. Grease a baking tray (approx. 35×40 cm). Spread the batter onto it. Bake in a preheated oven (electric oven: 175°C/ fan oven: 150°C/ gas mark 2) for approx. 25 minutes. Let the cake cool. Drain the peaches and cut into small pieces. Whip the cream until stiff, gradually adding the cream stiffener and 3 sachets of vanilla sugar. Mix the sour cream and 2 sachets of vanilla sugar. Fold the cream into the sour cream and fold in the peach pieces. Spread the peach sour cream evenly over the cake. Sprinkle the Fanta cake with sugar and cinnamon, if desired. You can also bake it in a springform pan (26 cm diameter). In this case, you only need half of all the ingredients.
