Fantastically fluffy scrambled eggs with yogurt, tomatoes and spring onions

Ingredients for 4 servings:

  • 4 eggs
  • 2 tomatoes, small to normal size
  • 2 spring onions, including the green parts
  • 4 tbsp natural yogurt, 1.5%
  • e.g. fresh basil
  • e.g. parsley, fresh
  • some olive oil
  • Pepper, freshly ground
  • Salt

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

Wash the tomatoes, spring onions, basil, and parsley. Dice the tomatoes. Slice the spring onions, including the green parts, into rings. Remove only the dry tips first. Chop the basil and parsley. Crack the eggs into a bowl and add the yogurt. Whisk vigorously with a fork. Add the tomatoes, spring onions, and herbs and mix everything together. Heat the oil in a pan and add the egg mixture. Fry briefly over medium heat, then stir occasionally with a spatula to make the egg nice and fluffy. Finally, season with salt and pepper. Tastes delicious on hearty whole-grain bread, but also on fresh rolls.
