Ingredients for 4 servings:
- 500 g potatoes, cooked
- 100 g smoked belly (Wammerl), (streaky bacon)
- 1 onion(s)
- 5 eggs
- butter
- Salt
- pepper
- Chives or parsley
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Slice the cooked, cold potatoes. Lightly fry the diced bacon and chopped onion in the fat. Add the potatoes and fry until browned. Pour the beaten eggs over the potatoes and let them set, stirring constantly. Sprinkle with finely chopped chives before serving.
