Ingredients for 4 servings:
- 640 g potatoes
- 1 tbsp oil
- 50 g breakfast bacon
- 200 g chanterelles, fresh, cleaned
- 1 onion(s)
- 4 eggs
- Salt and pepper, white
- ½ bunch parsley, chopped
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Peel and dice the potatoes. Fry the bacon in a pan and remove. Add the potatoes and fry in the bacon fat, turning occasionally. Add the chanterelle mushrooms and onion rings to the potatoes and continue frying. Season the eggs, add them, and let them set. Place the bacon on top and sprinkle with parsley.
