Ingredients for 1 servings:
- 25 g yeast
- 300 ml water, lukewarm
- 6 tbsp buttermilk
- 3 tbsp oil
- 350 g wheat flour type 812
- 100 g rye flour type 1150
- 150 g wheat flour type 550
- 2 tsp salt
- ½ tsp sugar
- Caraway seeds
- some milk, cold coffee or egg for brushing
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour 45 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 35 minutes
Crumble the yeast into lukewarm water. Add buttermilk, oil, wheat flour 550, rye flour, salt, and sugar and knead everything into a smooth dough. Sprinkle a little flour over the dough and let it rise in a warm place for 45 minutes. Knead the remaining flour into the dough, form it into an oblong loaf, and cover and let it rise for another 30-60 minutes. Brush with milk, cold coffee, or a beaten egg. Bake in the oven at 200-210 degrees Celsius for about 40 minutes. Let the loaf cool on a wire rack.
