Ingredients for 2 servings:
- 3 thick carrots
- 2 cups sour cream
- 1 cup coleslaw
- 1 small onion(s)
- 4 tsp mustard, to taste
- basil
- n. E. sheep’s cheese, low-fat, possibly.
- salt and pepper
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Low-carb
Grate the carrots finely, finely dice the onion, and add to a bowl along with the coleslaw, sour cream, mustard, and feta cheese, if using. Mix well and season with salt, pepper, and basil (fresh is fine). It tastes great the next day and can be further enhanced with a few ingredients.
