Ingredients for 4 servings:

  • 2 tbsp olive oil
  • 1 shallot(s)
  • 2 garlic cloves
  • 2 tomatoes, peeled
  • 500 g shrimp(s), small, ready to cook
  • 125 ml white wine
  • 3 tbsp water
  • salt and pepper
  • Cayenne pepper or piri-piri
  • 400g spaghetti
  • 80 g butter
  • Mint leaves, fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Spaghetti with shrimp sauce

Heat the olive oil, add the finely diced shallot and the peeled, finely chopped garlic cloves, and fry until golden brown. Finely dice the tomatoes, add them, and sauté for a few minutes. Add the prepared shrimp, braise briefly, add the white wine and water, and simmer until the broth thickens. Season with salt, pepper, and piri-piri or cayenne pepper. Cook the spaghetti in salted water, pour into a sieve, drain, and arrange on warmed plates. Place a few knobs of butter on top and pour the shrimp sauce over the top. Garnish with mint leaves and serve quickly.
