Ingredients for 2 servings:
- 150 g beans (fave or broad beans), dried
- 50 g bacon
- 2 stalks celery
- ½ onion(s)
- 1 small can of tomatoes, chopped or fresh tomatoes
- some parsley, chopped
- salt and pepper
- olive oil
Instructions
Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 35 minutes; Total time approx. 12 hours 45 minutes
Bean soup with dried broad beans
Soak the fava beans in water for at least 12 hours. Then discard the soaking water and briefly rinse the beans. Finely chop the onion, celery, and bacon and fry them in a little olive oil. Add the fava beans with the tomatoes and cook for about 30 minutes. The beans are ready when they begin to break down a little. Add a little more water, if necessary. Season with salt and pepper, add the chopped parsley, and drizzle with a generous splash of olive oil before serving.
