Lentil soup simple and sophisticated

Ingredients for 4 servings:

  • 500 g lentils, dried
  • 2 liters of water
  • 250 ml red wine, dry
  • 250 g potatoes
  • 1 serving of soup vegetables (celery, leek, carrots), finely chopped
  • salt and pepper
  • 5 pairs of Vienna sausages
  • 1 large onion(s), diced
  • 1 bunch parsley, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Simmer the lentils in 2 liters of water and the red wine for about 30 minutes. Then add the diced potatoes and simmer for another 10 minutes. Now add the soup vegetables, salt, and pepper, and let simmer for another 20 minutes (the vegetables will stay nice and firm). Meanwhile, slice the wiener sausages and fry them in a pan with the onion. Then add both to the pot with the lentils. Add the parsley, spice everything up a bit with the cayenne pepper, and stir. The red wine gives the lentils a very sophisticated flavor, yet they’re still easy to make.
