Fennel, Carrot and Apple Salad

The perfect fennel, carrot and apple salad recipe with a picture and simple step-by-step instructions.

dressing

  • 2 small Carrots
  • 1 piece Apple
  • 2 – 3 tbsp Lemon concentrate
  • 100 ml Vegetable broth
  • 1 tsp Mustard medium hot
  • 10 Basil leaves
  • 5 Branches Parsely
  • 3 tbsp Walnut oil
  • Salt and pepper
  1. Mix the ingredients for the dressing, adding in the oil at the end.
  2. Clean, wash and finely slice the fennel. Wash the carrots and grate finely. Wash the apple, cut out the stalk, quarter it and slice it into fine slices.
  3. Mix everything with the dressing and let it steep for at least an hour. Turn several times with salad servers. If necessary, stir in the stock and lemon juice and season with pepper.
  4. I had vegetable pancakes with it
