Fennel Salad with Grapes and Ham

Ingredients
 

  • 3 Fennel bulbs
  • 0,5 Lemon
  • 1 pinch Salt
  • 200 g Grapes blue
  • 200 g White grapes
  • 400 g Serrano ham
  • 4 tbsp Olive oil
  • 4 tbsp Grapeseed oil
  • 1 tbsp Balsamic vinegar
  • 1 Egg yolk
  • 2 tbsp Orange mustard
  • 1 tbsp Flower honey
  • 1 pinch Pepper
  • 0,5 tsp Sugar
  • 70 g Sunflower seeds

Instructions
 

  • Clean the fennel and cut into thin slices. Then put the fennel in hot lemon-salt water - let the fennel soak in the water for about 3 minutes. Then quench in the ice water.
  • Wash the grapes, cut in half and core if necessary. For the dressing, mix well the oils, vinegar, egg yolks, honey and spices. Drape the fennel slices on the plates, drizzle with the dressing and top with the grapes. Place the ham loosely next to it.
